Coriander Marinade - Recipe

You will need:

A good fresh bunch of coriander; 3 bullet chillies; 3 cloves of garlic; 1 lime; salt; olive oil; a blender of some description...

This one is dead easy and was taught to me, Rich, Mich and Dave by the lovely Dipak Patel at Silver Spice.

Chop your (pre-washed) coriander and take advantage of the stalks as well. Bob them into your blender, then add your chillies, garlic, salt, oil and the juice of your lime then blitz. Blitz to your little heart's content. If it looks as if it needs more oil, add more... start sparingly cos you can always add more but you can't take it out!

That's it, that's all you need to do. Place your marinade in an airtight container and it will keep in the fridge for up to 3 months.

The marinade is ace on chicken or salmon, works well when stirred into a curry or a chilli and even better when stirred into plain yoghurt and used as a side for popadums and the like.

Try it, you'll bloody love it.
