My first attempt at sea bream

I've been meaning to try fish for ages, I mean proper fish, not white fish fillets or stuff from the chippy. I've seen it on the telly with the chefs raving about it, and like to look at the recipes in my collection of cooking magazines.... then finally, on Saturday, I plucked up the courage to but some.

I'd already decided that sea bream was going to be my fish of choice, mainly cos I'd seen a nice recipe (in Olive) so off I trotted to buy some (well, one - with it's head on, and skin - in fact, everything in tact minus its guts).

I grated 2cm of fresh ginger, chopped 2 spring onions, 3 green chillies and popped half in the cavity and rubbed the remainder on the top with some soy sauce, then cooked it in foil for 30 minutes until perfectly cooked.

While it was cooking, I boiled some new potatoes until tender, then oiled them, seasoned them and let them roast while the fish finished.

I removed the fish, took off the head, tail and skin which left 2 nice sized steaks - one each for Tra and me. Served with the potatoes and some mixed veg and it was most pleasant. For some reason, I didn't get much of the flavour of the spices, though Tra did (hmmph!) and she was really impressed.

For a first attempt, it was good, I'll certainly try cooking fish again, though maybe not sea bream next time. I'm pining after sea bass! I'll need to warn our bellies first though, I don't think either of ours were expecting this sort of food which caused one or two problems first thing this morning (shhh).

All in all, I recommend the fish - try the sea bream and let me know how you get on.

Matty x
